Cooking for One with Katy - Season 2 (w/o sugar or flour), Episode 3

On location in BOISE!!!


Black Bean Hash:

With a little bit of Extra Virgin Olive Oil, cook the following on the stove top:
Diced peppers (any color you want)
Diced Onion
JalapeƱo
Corn
Black Beans
Tomato
Cilantro

Season with:
Salt & Pepper
Mrs. Dash
Garlic Powder
Cumin

Top with:
Chopped avocado
Lime juice
Cubed or shredded cooked chicken
Sour Cream

Serve with:
Brown rice
Corn tortillas
Corn chips

Note: the exact amounts and ingredients are up to you ... this is the gist of it. Go crazy

I've been blessed to receive a lot of light this last week, mainly because I've been able to attend the Reno, Oakland, Sacramento, and St. Paul temples. There is so much light and truth in those buildings. I love it.

Have you ever met someone with a bright personality and a light in their eye? It makes me happy and hopeful to interact with and learn from such people.  There really is "hope smiling brightly before us."

I've had so many perfect days lately. It's hard to imagine that there is an even more perfect day yet to come. I guess I'll just have to continueth in God so that light can grow brighter until that perfect day. It's pretty exciting. 

There really is something to learning by study and also by faith. Here is Van reciting D&C 109:7

Cooking for One with Katy - Season 2 (w/o sugar or flour), Episode 2



Fish Tacos with Kathy ... YUM!!!

Recipe:

Broil Tilapia or Mahi Mahi loins for 7 minutes on each side with a bit of salt and pepper.

Sauce: 1/3 cup yogurt, 1 teaspoon finely chopped ginger, 1 teaspoon ground cumin, 2 Tbsp lime juice

Serve with corn tortillas, sauce, chopped mango, cilantro, and salsa . Kathy also suggested adding some pico or avocado

2012 Goals & Happenings - Progress Report for Q1

I'm on track with my 2012 goals so far ... Below is a quick summary of what I've done from January to the end of March.  One of the major things I accomplished was passing my dissertation prospectus which means I'm now in the thick of preparing for data collection and analysis. I'm happy to have the ball rolling. I hope to finish up and graduate sometime this year.

Even though the snow was scarce this winter, I did make it cross country skiing one time

I was also able to spend some fun times with my friends while on my temple trips to Idaho and Texas.

I'm so pleased with this can crusher which was installed in my pantry. I use it every day!

These totally gross birds made my patio their home and I'm too grossed out and lazy to stop the perpetuation of this nasty species. Anyone else want to help out?

I love this holiday, especially this movie ...


Sometimes life can be monotonous ... 


And sometimes we run into people like this guy...



The reason I love this movie is because it has a great message. Even though life can be monotonous and people are annoying or we step in a puddle and get our feet wet, we can still enjoy life. If we have hope and are truly happy, we will naturally look for ways to serve others. I love the transformation Phil goes through. 

Every day is a gift ... even if every day is the same day.

This is such a fun goal. I love spending FHE with my friends!


Lucky Kenon, she gets to live with all these men. 

We sang "Jesus wants me for a Sunbeam" and then Tyler gave the lesson on faith and courage.

We then played a very intense game of gospel pictionary. And let it be known that Kenon gave hints to both teams so it was fair ... 

But in the end, my team (with Kade and Easton) came out on top.

  • Attend one FHE every month with one of my friend's families ...
    • Can I come over one Monday night in 2012?
  • Shoot, edit and post one episode of “Cooking For One with Katy w/o sugar and flour” per month
    • Will you be a guest cook on my second official season of CFO with Katy (w/o Sugar and Flour)?
    • Can you teach me how to make a healthy recipe?
  • Complete two half marathons  
    • Wanna run one of these with me?
    • Wanna train for one of these with me?
    • Wanna cheer me on?
    • Any suggestions?
  • Complete one Olympic triathlon

OK, so I can't promise I'll complete all of these, but I sure as heck will try ...

Oh, and after much deliberation, I have decided NOT to try and give up diet soda in 2012 ... just FYI
