Cooking for One with Katy - Season 2 (w/o sugar or flour), Episode 2



Fish Tacos with Kathy ... YUM!!!

Recipe:

Broil Tilapia or Mahi Mahi loins for 7 minutes on each side with a bit of salt and pepper.

Sauce: 1/3 cup yogurt, 1 teaspoon finely chopped ginger, 1 teaspoon ground cumin, 2 Tbsp lime juice

Serve with corn tortillas, sauce, chopped mango, cilantro, and salsa . Kathy also suggested adding some pico or avocado

2012 Goals & Happenings - Progress Report for Q1

I'm on track with my 2012 goals so far ... Below is a quick summary of what I've done from January to the end of March.  One of the major things I accomplished was passing my dissertation prospectus which means I'm now in the thick of preparing for data collection and analysis. I'm happy to have the ball rolling. I hope to finish up and graduate sometime this year.

1/2 Marathon Training:
Last Saturday on my 11 mile run. I plan on running in a half marathon on April 28 in Sacramento.



Coaching the Lady Cavemen:
We made it to the semi-finals in the 5A State Tournament. It was lots of fun!

Even though the snow was scarce this winter, I did make it cross country skiing one time

I was also able to spend some fun times with my friends while on my temple trips to Idaho and Texas.

I'm so pleased with this can crusher which was installed in my pantry. I use it every day!

These totally gross birds made my patio their home and I'm too grossed out and lazy to stop the perpetuation of this nasty species. Anyone else want to help out?
