My 49th Birthday Bingo!
This idea came to me as I was hiking up Rock Canyon one morning. I had decided not to bring my AirPods because some of Ann Dee's kids had agreed to hike with me at 6AM on a weekday during the summer. Well, it turns out hiking at that hour is a good idea until that hours actually hits. Needless to say, I was hiking by myself without my AirPods and I started thinking about this milestone of turning 50 years old in the next year. Here are the thoughts that came to my mind:
- I like lists and I get some degree of a dopamine hit when I can check something off
- I like spending time with my friends
- I've been blessed with many friends who are at various stages in their life
We are not even a month into this challenge and it has been so fun to hear about what people are doing with it. I've also been able to connect with many friends and family that are trying to earn raffle entries.
For example, I had a phone call yesterday with the legendary Merrill Webb. He greeted me as “Dr. Knight” and that alone made my day. I have so much love and respect for this man. He was calling to ask about how to report his bingo activities. It made me so happy and pleased that he was playing. He told me about some of the experiences he had such as getting his first pedicure, eating at Sensuous Sandwich, and going to the farmer’s market. Then he offered his services to help anyone working on the bingo to help us find a Common Loon on Deer Creek.
I had breakfast this morning with some student employees as well as with Duane and Kate (my name's sake) Henderson. I've been on walks with friends around the Provo High track, hikes up Rock Canyon, lunch at Sensuous, golf, pickleball, puzzles, and the list goes on.
I feel so blessed with such wonderful people in my life who are playing along and already making this year the best year yet!

Global Big Day - May 9, 2020









Yesterday we set off for our "big day" and what an experience! It was a blast. It was a beautiful day and the weather was perfect. We saw a total of 105 species in about 14 different areas in Utah, Wasatch, and Davis counties. I saw 10 "lifers," which are new species that I've never seen in my life.

National Tell a Story Day - Junior Prom, Provo High School,1993 #katys40of40
Once upon a time, I was a junior in high school attending release-time seminary at the building next to our Provo High School. One spring day - a Friday as I recall - as I was leaving seminary to go back to my other classes at the high school, Brother Wilcox stopped me and gave me this special assignment:


I don't think we've changed one bit! Thanks Richard Crookston for an awesome date! I think that was the first and only time I've ever been skeet shooting (is that even what it is called?).

Cooking for One with Katy - Season 2 (w/o sugar or flour), Episode 3
Black Bean Hash:
With a little bit of Extra Virgin Olive Oil, cook the following on the stove top:
Diced peppers (any color you want)
Diced Onion
Jalapeño
Corn
Black Beans
Tomato
Cilantro
Season with:
Salt & Pepper
Mrs. Dash
Garlic Powder
Cumin
Top with:
Chopped avocado
Lime juice
Cubed or shredded cooked chicken
Sour Cream
Serve with:
Brown rice
Corn tortillas
Corn chips
Note: the exact amounts and ingredients are up to you ... this is the gist of it. Go crazy

Cooking for One with Katy - Season 2 (w/o sugar or flour), Episode 2
Fish Tacos with Kathy ... YUM!!!
Recipe:
Broil Tilapia or Mahi Mahi loins for 7 minutes on each side with a bit of salt and pepper.
Sauce: 1/3 cup yogurt, 1 teaspoon finely chopped ginger, 1 teaspoon ground cumin, 2 Tbsp lime juice
Serve with corn tortillas, sauce, chopped mango, cilantro, and salsa . Kathy also suggested adding some pico or avocado
